This lovely light and fresh salad is a perfect accompaniment to a variety of summer dinners: roast chicken, burgers, barbequed kabobs…you name it. The flavours are distinctly Mediterranean and outdoorsy.
¼ Red Onion
3 Oranges, peeled
10 Kalamata Olives, sliced in half and pitted
10 Fresh Mint Leaves
¼ Cup Pine Nuts
2 Tbsp Olive Oil
1 Tbsp Sri Lankan True Cinnamon
1-2 tsp Honey
2 tsp Orange Blossom Water
Sea Salt and Cracked Black Pepper
