Green cardamom is still not widely used in North America but it has been used in India for 2000 years. Sometimes mistakenly called “cardamon,” it is an incredibly versatile spice that enhances both sweet and savoury foods. Green cardamom is essential to many curry powders and daals (lentil dishes), as well as Indian rice pudding and chai. It is also used widely in European (especially Scandinavian) baking. We offer green cardamom in whole pods, as well as whole and ground inner seeds (for those who want to save themselves the trouble of shelling and grinding). However, the pods protect the seeds against air and light, so they will keep their flavour longer.
