Grains of Selim are small seed pods from a variety of shrubby evergreen that grows across Africa. Like our popular Grains of Paradise, they have an interesting peppery sharpness accented with fruity and sweet notes. With elements of nutmeg and clove, the flavour is a little reminiscent of spiced orange peel.
Grains of Selim are used across much of Africa in soups, stews, and roasts, as well as in spice pastes and blends. They can be ground and added to dishes directly, or lightly crushed, infused, and then removed before serving. They are also used to flavour coffee, especially in Senegal, where they are the key ingredient in a local specialty known as café Touba.
