Tarragon is a delicate herb that tastes a bit like basil with flavours of spicy anise. It is indispensable in French cooking where it is used mostly in fish, poultry and egg dishes. Tarragon is one of the four “fines herbes” of French cooking, and is one of the main components of Béarnaise sauce. Its flavour also works well with wine and shallots. Recently some of the tarragon on the market has been Russian tarragon, which is cheaper and easier to grow but does not have the same complexity of flavour as the French variety. We sell only the finest French tarragon.
