Peychaud's Bitters are one of the oldest consistently available bitters brands in existence. It was created in New Orleans circa 1830 by Antoine Amédée Peychaud, an apothecary from Saint-Domingue (which is now Haiti). It is now produced by the Buffalo Trace Distillery in Frankfort, Kentucky.
Peychaud's Bitters are a bright crimson colour and have a flavour that is strongly anise-based and sweetly spicy. Called for in many modern drinks, but absolutely essential to the Sazerac, a traditional New Orleans cocktail.
