Ghost chiles were specifically cultivated to be the hottest chiles on the planet at the time they first emerged. They have since been surpassed in heat by Carolina Reapers, Trinidad Scorpions, and several others, but they remain unbelievably hot by normal standards. However, they don’t provide heat alone – they have an amazing flavour of burnt mango.
Ghost chiles are widely used in hot sauces, as well as on chicken wings and in stews and chilis. The flavour is great, but a little goes a long way.
Handle with extreme caution. Always wear gloves when working with ghost chiles and always wash your hands carefully afterwards.
