This rub is a variation on a traditional African seasoning that uses a number of ingredients that are common in that part of the world. It has a base of mustard and paprika, includes nutmeg and allspice for sweetness, ginger and chiles for heat, and most importantly, dried orange peel for tartness and flavour.
Our West-African Citrus Spice has medium heat with just a bit of sweetness. It’s great on grilled chicken and pork, as well as in stews and slow-cooked dishes. Our favourite use for it, though, is crusted on a tuna steak that is pan-seared rare. The orange flavour really complements the fish and the overall effect is unbelievable.
