Quatre Épices, literally “four spices,” is a French blend that is mainly used to season soups, beef stews, and charcuterie like sausages. We like it as a dry rub for pork roast, mixed with a bit of kosher salt and freshly chopped rosemary.
Occasionally cake or pudding recipes will call for Quatre Épices, and in these cases they are referring to a less common sweet version that uses allspice instead of pepper. At the moment, we only sell the savory version. Our Quatre Épices blend is mixed from freshly ground white pepper, nutmeg, ginger and cloves.
