Vadouvan is a spice blend with its origins in the French colonial areas of India. It combines many of the classic flavours of Indian cuisine in a typically French preparation, similar to the way that Yellow Curry Powder functioned for British colonials.
Traditionally, Vadouvan is a wet spice mixture, made with loads of pulverized fresh shallots, onions, and garlic mixed with oil, rolled into balls, and dried. Our version preserves all those wonderful flavours in a format that is easier to use and easier to store.
Unlike most curry powders, Vadouvan contains a small amount of salt. This gives it the benefit of being ready to use as-is: you can cook it in oil before adding meat and vegetables, or you can dry-rub it on meat for the grill. You can even use it as an all-purpose curry seasoning in yoghurt for dips or as a last step in a rice bowl or stir fry. It’s perfect for adding to a simmering pot of rice, quinoa or other grains.
