Yakitori (skewered chicken parts grilled over charcoal) and kushiyaki (a general term for any foods similarly grilled) can be seasoned in many different ways. Some prefer to add nothing but a little salt, and some prefer a tare sauce of soy, mirin and more. Our Yatai Yakitori Seasoning chooses a more complicated route of flavours and sensations. It’s heavy on Szechuan peppercorns for an interesting numbing heat, and it includes wasabi, porcini mushrooms, tomatoes, and sesame seeds for high levels of umami. Sea salt, orange peel, garlic, onion, ginger, lime juice, and honey round it out with aromatic sweetness and bright intensity. There’s a lot going on in here.
We’ve named this blend Yatai Yakitori Seasoning after the traditional mobile food stalls (“yatai”) of Japan that have historically served yakitori and other convenient foods to commuters and bar-goers. In spite of its complex flavour, it is meant to be a simple, do-everything blend for super-savoury meats and vegetables.
Use this blend as a seasoning for traditional charcoal-grilled yakitori, dry rub larger cuts of meat for grilling or sautéing, sprinkle on vegetables and rice, or marinate cubes of tofu for your homemade ramen.
Ingredients: Szechuan pepper, sea salt, garlic, sesame seeds, orange peel, onion, ginger, chiles, wasabi powder (horseradish, mustard, cornstarch, ascorbic acid, citric acid, colour), porcini powder, tomato powder, galangal, lemon juice powder (maltodextrin, lime juice solids), honey powder (sugar, honey).
