Thai green curry is not usually made from a powder. It’s much more common to build this curry as a paste from fresh ingredients: lime juice, basil and cilantro, fresh green chiles, and so on. However, not everyone wants to go to the trouble or has access to all those ingredients on a daily basis. So we created our Thai Green Curry Powder to be one quick and easy step away from a great, fresh Thai curry.
This blend is mixed from a whole range of hard-to-find ingredients: lime peel, galangal, lime leaves, green serrano chiles, cilantro and basil, as well as lime juice powder for a really authentic flavour. The ideal way to use it is to mix it into a paste and marinate your chicken. For a basic paste, combine 2 tbsp of Thai Green Curry Powder, 2 tbsp of fish sauce, and 1 tbsp of lime juice. Then fry the whole lot in a pan with some olive oil before adding some chopped zucchini and a can of coconut milk. Simmer and serve on rice with crushed pistachios. Perfect. If you don’t have fish sauce (or are making a vegetarian version), substitute 1 tbsp of soy sauce, 2 tsp of water and 1 tsp of olive oil.
You can also use this blend in other ways. It’s great as a unique substitute for Indian curry powder in other recipes, or use your creativity to come up with new ideas (think chicken wings, mussels, salad dressings…). The possibilities are endless.
