Aji Pancas are small, reddish Peruvian chiles. They are similar to the very common Aji Amarillo, and share a certain fruitiness, though with a deeper, more savoury flavour. They are quite hot, so use with care. Try these chiles in salsas, ceviche, etc. or in any situation where you want a more flavourful heat than you would get with cayenne pepper.
