Native to the eastern Mediterranean and Middle East, anise seeds (or aniseeds) are sweet with a hint of licorice flavour that is more subtle than fennel, star anise or licorice root. It is mostly used for breads, cakes and sweet fruit dishes but it is also an ingredient in some Indian curries. Aniseed is valued for its digestive properties and its essential oil flavours liqueurs such as ouzo, pastis and Sambuca.
