Arrowroot powder is an unflavoured thickening agent used for sauces and desserts. It doesn’t contain gluten, so it’s a good flour substitute for people on gluten-free diets. Substitute two teaspoons of arrowroot for one tablespoon of cornstarch, or one teaspoon of arrowroot for one tablespoon of wheat flour. Arrowroot powder does not combine well with dairy products – it turns slimy and unpleasant.
