Burdock Root is used as a vegetable when fresh. In its dried form, it has an earthy flavour, a little like artichoke, that becomes sweeter as it steeps. Like many botanical roots, it’s used for making soft drinks, both on its own and in combination with other botanicals for root beer recipes.
