Fines herbes is a classic mixture of delicately flavoured herbs used in French cuisine. The exact herbs used will sometimes vary according to what is available, but our blend follows the traditional combination and contains tarragon, chervil, parsley and chives. The delicate nature of these herbs means that they will lose their flavour if cooked too long, so add them when the dish is nearly ready to be served. Fines herbes is excellent in egg dishes like omelets and quiche, and also works well in butter-based sauces. It’s delicious sprinkled on top of freshly sautéed mushrooms, and is a great topper for baked potatoes. If a recipe calls for fresh fines herbes, you will only need to add half the amount of dried.
