Madras curry is a spicy blend that originated in the Madras region in the south of India where the hot climate is ideal for growing chiles. It is a little deeper and hotter than our yellow curry powder since it is heavier on the cinnamon and chiles and lighter on the fenugreek.
Madras curry is a versatile blend that can be used for a variety of meat and vegetables dishes, though lamb madras is one of our favourite curries. Our Madras curry powder has a moderate heat and is hand-mixed from cumin, coriander, turmeric, cinnamon, black pepper, New Mexico chiles, brown mustard seeds, curry leaves, ginger, cardamom, fennel and more.
