This is our version of a classic Canadian spice blend, and we’ve named it after Boulevard St-Laurent, the Montreal street that houses our favourite smoked meat deli. This spice blend was originally developed by the eastern European immigrants who arrived in Montreal at the turn of the 20th century. They used salt, pepper and other spices to season and preserve smoked beef briskets in the delis that Montreal is now famous for.
Our version differs a bit from the commercial version, mostly in that it contains way less salt. Instead, we blend a balance of cracked black pepper and coarse salt with coriander, chile flakes, dill, paprika, mustard seeds, garlic and onion. It is less salty and more flavourful than many other versions.
This blend is excellent for bringing out the flavour of beef, but can also be used for other meats and on potatoes. Try it as a dry rub on barbequed steaks and oven-roasted prime rib. Or make a quick marinade by mixing 2 tablespoons of St-Laurent Steak Spice with ¼ cup of red wine, ½ cup of olive oil and 3 tablespoons of balsamic vinegar. Marinate your meat for half an hour in the fridge before grilling.
